Abstract
Using the banjhi shoots with two or three leaves of cultivar Jiukeng,activities variations of polyphenol oxidase(PPO)and peroxidase(POD)were investigated.The results showed that during the process,the activity of PPO was at high value after third rolling.The activity of POD was highest in fresh leaves,and declined during processing.
