Abstract
Morinda officinalis How polysaccharide was extracted by using cellulase. The difference of boiled water extraction and enzymatic extraction was compared. The effects of several factors such as the concentration, time, temperature and pH of cellulase on the extraction percent of polysaccharides were analyzed by single factor and orthogonal experiments. The results indicated that extraction rate of polysaccharides could be increased significantly by using cellulase. The optimum extraction conditions are temperature 55℃,pH 5.0,the concentration of cellulase 0.5% and extraction time 2h.The extraction rate of polysaccharides of enzymatic extraction was 8.56% which was 1.91 times that of bolied water extraction.
