Abstract
Objective To optimize the technology condition of Tenebriomlitor L.protein hydrolyzed by papain.Methods With Tenebriomlitor L.as the raw material,the effects of the amount of papain,ratio of solid to liquid,time,temperature and pH value on the extraction efficiency of amino acids were investigated.Results The optimal condition of enzymolysis was as follows: the amount of papain of 2.5%,ratio of solid to liquid of 1:3,hydrolysis for 6 h at 50℃ and pH 6.75.Conclusion The optimal technology condition of Tenebriomlitor L.protein hydrolyzed by papain can be obtained.
