Abstract

The effects of chitosan coatings(0.5%,1.0%,1.5% and 2.0%,W/V) on the preservation of tainong 1 mango fruits were investigated during storage at room temperature.The results showed that chitosan coating delayed the respiration and ethylene peaks,delayed the accumulation of total solid solubles,inhibited the change of pericarp color,significantly reduced the weight loss and the ripening process of harvested mango fruit was delayed.The result of 1.5% chitosan coating among the four different treatments was the best.
