Abstract
The experiment was carried out to measure the pigment content of succulent root of red-core radish by spectrophotometry and the absorption spectra and solution stability of the red-core radish and radish red pigment were analyzed.Results showed that the absorption peaks were all at 520 nm or so.Radish red pigment could be used as standard analytical.Solution stability of red-core radish was bad. It indicated that the pigment content of 7 strains of red-core radish were 8.4 ‰-15.2 ‰ and average 12.1 ‰ by calculating concentration of normal juice with standard curves of radish red pigment and measuring of water content.
