Abstract
The falling numbers and the concentrations of α-amylase inhibitor of 31 spring wheat varieties were determined by falling number method and SDS - PAGE scanning method. The results showed that there were significantly negative relationship between falling number and sprouting rate, and a-amylase activity was the main reason of sprouting. There was no relationship between concentration of a-amylase inhibitor and a-amylase and sprouting rate, a-amylase inhibitor of wheat did not inhibit a-amylase activity of wheat, and it did not influence the resistance of wheat sprouting, either.
