Isolation and Purification of Caproic Acid Bacteria from Pit Mud & Study of Its Acid-producing Capacity

Abstract
Caproic acid bacteria were isolated from pit mud in Sanjing Distillery and then purified for multiple batches.The acid-producing capacity were investigated.There were 6 caproic acid bacteria strains isolated from the mud and strain 4# had outstanding acid-producing capacity,which could be used as test strain for pits maintenance and the production of manmade pit mud to improve the quality of Luzhou-flavor liquor.
