Abstract
246 wheat varieties were used to study the variation and distribution of dry,wet gluten content and gluten water holding rate.The results showed that the variation of dry,wet gluten content and water holding rate of the samples in two crop seasons was significant and the ranges were 6.91% ~ 14.56%,18.22%~ 41.29% and 154.85% ~ 241.22%,respectively.Moreover,there were highly significant positive correlation between two crop seasons in dry,wet gluten content and moisture absorption,and the correlation coefficient were 0.621,0.682 and 0.399,respectively,which indicated that gluten related characters were mainly controlled by gene.The samples were selected according to the regions,and the results showed that the dry and wet gluten content of wheat from abroad and the middle and lower reaches of Yangtse River winter wheat region were higher than others,and those from Southwest winter wheat region were the lowest.These results supplement the information of wheat germplasm,which was useful for excellent parent's selection and utilization of fine genes in wheat quality breeding.
