Abstract
Milk was fermented by Aspergillus oryzae,and as mycelium dry weight for an indicator of the growth in milk have been studied through one-orthogonal,results showed that: inoculation 3%,with volume of 30 mL,shake speed bed for 180 r/min when the mycelium to reach the largest dry weight.And measuring the largest mycelium dry weight at the rate of decomposition of protein 35.6%.
