Abstract
The quality and safety of green-shell eggs from free-range chickens reared in orchard were analyzed and evaluated.The results showed that water content of green-shell eggs was 85.16%,lower than that of eggs from free-range local chickens and caged chickens ;ratio of egg white to egg yolk was more than 31.53% ;total amino acids of egg white detected was 12.541 g/100 g and that of egg yolk was 14.256 g/100 g ;essential amino acids of egg white was 5.361 g/100 g,and that of egg yolk was 5.947 g/100 g ;zinc contents of egg white and egg yolk were 0.51 mg/100 g and 18.503 mg/100 g,respectively,selenium content of those were 0.55 mg/100 g and 3.06 mg/100 g,respectively,slightly higher than those of eggs from free-range local chickens and caged chickens.Except for cadmium and fluorine,the other safety indicators had no actual value,according to existing detection methods,and microbial detection value was also relatively low.
