Abstract

The compositions were analyzed in muscles from 5 different fishes, Carassius auratus gibelio ♀×Cyprinus carpio L. ♂, allogynogenetic silver crucian carp Carassius auratus gibelio ♀×Carassius auratus cuvieri♂, Fangzheng crucian carp as one of the parent, Common carp Cyprinus carpio L.and Osaka crucian carp Carassius auratus cuvieri. The results showed that Fangzheng crucian carp as female had the highest concentrations of protein (180.3 mg/g), total amino acids(714.277 mg/g), essential amino acids (280.164 mg/g) and delicious amino acids (281.091 mg/g). For the allogynogenetic silver crucian carp, the values were mediate between the parents, lower than the male line of Fangzheng crucian carp, and higher than the female line of common carp or crucian carp.
