Abstract

Objective:To study the antioxidant effects of polyphenol from malusasiatica pomace on free radical and oil and provide the evidence for exploitation and utilization of malusasiatica pomace polyphenol resources.Methods:The scavenging capacities on the free radical and antioxidant effects of polyphenol from malusasiatica pomace on oil were determined by OH system,O-2 system,DPPH system and POV method.Results:With a certain range of concentrations,polyphenol from malusasiatica pomace showed strong scavenging capacities on the OH,O-2 and DPPH free radical,and the effect was enhanced with an increase in the concentration,and the scavenging rate was certain dose-dependent manner.The POV value of the treatment group which added polyphenol from malusasiatica pomace was obviously lower than that of the control group,and the POV value decreased gradually with an increase of polyphenol addition.Oxidation resistance effect of 0.16% polyphenol from malusasiatica pomace was similar to that of 0.02% antioxidant BHT.Conclusion:The polyphenol from malusasiatica pomace has characteristics of scavenging free radical and definite antioxidant effect on oil,and it can be applied as an effective natural antioxidant.
