Abstract

To study the nutritional characteristics of the main breeding freshwater fish scale in Zhengzhou city, taking the fish scales(dry basis) of crucian carp, grass carp, carp and silver carp as samples, and the crude protein,amino acids, crude fat and fatty acid content were measured by using the Kjeldahl method, reversed-phase high performance liquid chromatography, Soxhlet extraction and gas chromatography method. The results showed that the contents of crude protein of crucian carp, grass carp, carp and silver carp scales were 56.3%, 67.3%, 75.9% and 76.2% respectively. Crude fat content were 1.92%, 1.34%, 2.55% and 1.08%, respectively. The scales contained 17 kinds of amino acids, and the glycine contents were 12.84%, 15.44%, 18.19% and 19.02% respectively. The contents of linoleic acid were 71.15, 196.39, 117.19 and 136.65 mg/kg, respectively. Therefore, scales of the main freshwater fish in Zhengzhou city mainly rich in nutritional value, so it has important development and utilization value.
