Abstract

A phytase from Aspergillus Niger (A.niger) N25 was purified by ammonium sulfate precipi tation. Its molecular weight is 69 15KD, and optimal pH is 4 6. Its optimal temperature is 60℃. The enzyme can be activated by the Fe 2+ , polyethylene glycol 10000 and lower P; inhibited by Ca 2+ , Mg 2+ , Mn 2+ , EDTA and high P.
