Abstract
The properties of phytase from A. niger 4961 were studied. The results showed that, two phytases existed in the extract of A.niger 4961; the optimal pH, the optimal temperature, and the molecular weight of the two phytases were 6.0,3.0, 40 ℃,55 ℃,and 64 200,41,100, respectively.
