Application of SAS Software to Analyze the Factors Influencing the Yield of Fusel Oil in Liquor Production by Solid Fermentation

Abstract

The factors influencing the yield of fusel oil in liquor production by solid fermentation were analyzed and futher optimized by SAS software.The results suggested that Daqu was the most important influencing factor and then the use level of proteinase.The analysis of the main composition of fusel oil—isoamyl also made the same conclusion.
