Abstract

The concentration of anthocyanins in the extraction of five red blueberry leaves were determined with spectrophotometer.The results indicated that highest concentration of anthocyanins was found in Sharpland as 278.2 mg/100 g dry weight,followed by Gardenblue 135.5 Premier 82.6Powderblue 53.7 mg/100 g Baldwin 40.1.Based on single extracting yield,the optimal condition of supersonic wave assist extraction was also obtained.The results suggest that the maximum of extract ratio of anthocyanins from red leaves of Sharpland blueberry could reach 85.5% under the optimal condition:80% ethanol,ratio of sample weight and solvent volume,1:30;extraction time,40 min;extract times,2;concentration of HCl in extaction solvent,0.3%.
