Abstract

The methods of enzymatic hydrolysis of angiotensin coverting enzyme inhibitory peptides(ACEIP) from byproduct of Enzymatic Hydrolysis by Pinctada martensii were studied in this paper. The optimized hydrolyzed conditions, including selection of optimal protease, were estibilished. The optimal conditions Papain's enzymatic hydrolysate were pH 6.0, hydrolysis temperature 55 ℃, enzyme concentration 800 IU/g, enzymatic hydrolysis time 3.0 hours, substrates concentration 10%. In such condition, the inhibitory activity of Papain's enzymatic hydrolysate and the IC50 were 69.8% and 0.642 mg/mL, respectively.
