Abstract
In this paper,we used alcalase as catalyst to hydrolyze pea protein,and studied the DPPH· scavenging rate of the hydrolyzate of the pea protein prepared under different conditions.The hydrolysis conditions were optimized by response surface methodology on the basis of single factor experiments,and the optimized conditions were as follows: hydrolysis temperature 56.5 ℃,time 3.2 h,pH 6.1,alcalase content 3.0%(W/W), and substrate concentration 3.0%(W/V).Under the conditions,the DPPH· scavenging rate of the hydrolyzate was up to 47.83%.
