Abstract
In this paper the effect of enzymatic methods on the hydrolysis of Acetes chinensis were discussed. We selected trypsin and protamex from four commercial proteases for bi-enzymatic hydrolysis of Acetes chinensis, orthogonal trials were employed to optimize their reaction conditions, Acetes chinensis was hydrolyzed by trypsin and then by protamex under their optimum conditions, the final degree of hydrolysis was up to 67.83%. The results of this study could expect a great promotion in the research of exploiting the Acetes chinensis resources.
