Abstract

Enzymatic hydrolysis of casein by trypsin under alkaline condition were systematicaly studied.The effects of operating parameters-enzyme concentration,substrate concentration,time,pH and temperature-on the degree and the speed of hydrolysis of hydrolysed protein were measured by colorimetic method.
