The appropriate factors and level were selected by the single factor experiment,the extraction process conditions by response surface optimization were substrate concentration 0.95%,time 122.29 min,temperature 45.97 ℃,pH 4.8,liquid ratio 1∶20(g/mL) and extraction rate of soluble dietary fiber from jujube residue was 4.917 03%.
