Abstract
Using jujube slag as material, the water-insoluble dietary fiber was extracted from jujube slag with chemical method. The effect of concentration of sodium hydroxide,solid-liquid ratio, extraction temperature and time on the yield of jujube dietary fiber were studied by single-factor experiments and orthogonal experiment, and the extraction process was further optimized. The results showed that the optimum conditions were that the concentration of sodium hydroxide 5%,solid-liquid ratio 1∶4g / mL,extraction temperature 50℃ and extraction time 40min.Under these conditions, dietary fiber yield reached 17.01%,and the production was light yellow, with no other peculiar smell.
