Abstract

In this study,the process to extract peanut protein assisted by ultrasonic and microwave method was optimized using the Box-Behnken central combined experimental design.Five important factors(microwave power,pH of raw material,time,the ratio of meal to solvent and pH of solution) were analyzed in the single factor experiments to investigate their effect on the peanut protein extraction.The regression model of microwave power,pH and the ratio of meal to solvent was established.The results showed that the five factors significantly influenced the ratio of protein extraction(P0.05),the optimum factors were as follows: pH 9.73,under 72 W microwave power,the ratio of meal to solvent was 1:28,extracting time 500 seconds.From those condition,the extraction rate of protein was 88.37%,the content of extracted protein was 88.95%.
