Abstract

The extraction condition and the stability of red pigment from euphorbla pulcherrima were studied.Applied ethanol as extractant,the stability of pigment was studied by UV spectrum.The optimum extraction conditions were obtained: 65% ethanol which pH=3,the ratio of material to ethanol was 1∶10,extracted under room temperature for 24 h,and the maximum absorption wave was at 440 nm.The pigment was water-soluble and had good stability when pH was 1~9.
