Abstract
The extraction technology of pigment from Peanut-skin was optimized by L9(34)orthogonal test,and the stability of the pigment was studied in this paper.The results showed:Pigment optimal extraction conditions were that extraction agent is 50% ethanol,extraction temperature is 40℃,extraction time is 60 min,solidliquid ratio is 1:25.Peanut-skin red pigment of the characteristic absorption peak is 495 nm;this pigment has good stability for pH,temperature,light,and the VC、K+、Na+、Ca2+、Mg2+、Cu2+、Na2SO3,has less stability for citric acid,H2O2 and Fe3+ etc.
