Abstract
To develop the production of fuel ethanol in the south of China,the experiment by fermentation with(uncooked) paddy was studied and the optimal technological conditions were obtained as 1 ∶1.8 of paddy to water(ratio,) 200 U/g of glucoamylase,5 U/g of pectinase,10 U/g of cellulase and 10 U/g of acid proteinase.The(results) show that phytase can improve the fermentation of uncooked paddy,and the content of reducing sugar is keeping at low level in the fermenting process,which has the advantage of avoiding being infected by bacteria.The experiment also shows that the technology of fermentation with uncooked paddy is simpler than traditional(technology,) and can get higher conversion ratio of material and volume fraction of ethanol.
