Abstract
After converted to methyl esters with KOH-CH3OH, trans fatty acids in edible oil were separated and analyzed by capillary gas (DB-23) chromatography with high polarity. The results showed that a good linear relationship (r=0.999)existed in the range of 0~2.0 mg/mL under optimal conditions and the detection limit were10 μg/mL (S/N=3). The recoveries ranged from 90.2% to 98.0%, with the relative standard deviations of 1.5%~4.1%. The method was shown to be simple, convenient and accurate and was suitable for the determination of trans fatty acids in edible oil.
