Abstract

The biological properties of Candida cariosilignicola, which was isolated from traditional glutinous rice wine in Yunnan province, were analyzed in the paper. Conclusions were made that the optimum growth temperatures was at 25℃, the optimum growth pH values was 5.5, the optimum fermentation temperature was at 25℃, the optimum fermentation pH value was 5.5, the optimum fermentation concentration was 10%, the optimum fermentation primitive sugar concentration was 27°Bx. Based on the biological properties and each fermentation values of fermentation fluid, optimum fermentation parameters of brewing processing was gained through orthogonal test: the optimum fermentation temperature was at 25℃, the optimum fermentation concentration of yeast was 8%, the optimum fermentation sugar concentration was 20°Bx.
