Abstract
Pigment is extracted from purple primrose seasons as raw material,and its stability was studied. The results showed that the 95% ethanol solution with pH = 1 was a better extraction solvent,the pigment had maximum absorption peak at 382 nm; the pigment had good light resistance,bad reduction and oxidation resistance,and was unstable under acid condition; The metal ions Na+、K+、Mg2 +、Zn2 +have less effect on the pigment,but Fe3 +has larger effect on the stability of the pigment,while food additives( for example: glucose,sucrose,soluble starch and citric acid),low valence metal ions had no negative effect.
