Abstract
Extraction conditionan and physicochemical property of red pigment in purple cabbages were studied in this paper,and the results were as follows.High yields of pigment could be obtained by 40% ethanol solution of pH1 at 80℃ for 30 min with the ratio of 1g∶40 mL(solid-liquid).The red pigment in purple cabbage is anthocyanin,and pH value had significant effect on the pigment within 80℃.High light intensity could accelerate decomposition of the pigment.Metal ions such as Al3+,Ca2+,Zn2+ and Cu2+ had no effect on the pigment color,but Fe3+ had harmful effect.Conventional additives as sucrose,glucose and table salt had no effect on the pigment.
