Abstract

This paper aims to have a discussion about the effect of the different conditions on the porosity of corn porous starch,and the possible mechanism.Optimal corn porous starch processing conditions are determined as follows: complex enzyme that could theoretically hydrolyze 30 times of 55% of the added raw starch;ratio of α-1,4-glucanglucohydrolase to α-amylase 7:1;pH 5.6;temperature 60℃;starch solid concentratio n(w/v) 60%;reation time 20h.The result shows that after the reaction the oil adsorption ratio of corn starch was increased from 16.15% to 47.59%.
