Abstract
The new extraction technique of soybean peptides by triple-enzyme composite hydrolysis was established in this study.Soybean peptides were obtained from isolated soybean protein by triple-enzyme composite hydrolysis and purification. The result showed that the best conditions of composite enzymatic hydrolysis were: the composite enzymes were made up of neutral proteinase, papain and bromelain with the ratio of 1∶2∶4,pH 7.0,4.0% of substrate concentration, and hydrolysis time for 9 h;the best conditions of decoloration were: 2.0% of activated carbon,50℃ of temperature,pH 3.0,adsorption time for 3 h;the ultra-filtration conditions were: NF-1 nanometer membrane,1.0 MPa of pressure and 26.0 L/(m~2·h) of the permeate flux.
