Abstract
In this study,the authors extracted total polyphenol from pomegranate peel by means of Ultrasonic assisted extraction.The best processing condition was attained by single factor and orthogonal experiment.In ethanol solution with 40% concentration and 1∶30 of mass ratio,extracting time was 30 min at the temperature of 60 ℃,and the extraction was conducted 3 times while ultrasonic frequency was 36kHz.In this condition,the extraction rate of total polyphenol was 25.86%.The scavenging free radical of pomegranate extraction on superoxide radicals and DPPH radical were also determined.The effective concentration for scavenging 50% free radicals was 43.48 g/L and 0.013 g/L respectively.
