Abstract

This paper takes integral apple-pear and crisp pear which are collected from Ordos Region of Inner-Mongolia as experimental materials. The result were obtained by measuring mechanical characteristics parameters and quality target of pear: with the enhancement of pear maturity, five parameters of mechanical properties reduced, sugar content decreased and the titratable acidity and moisture Content fell down; crisp pear had more moisture content than apple-pear, and more easily evaporated the moisture by comparing with the same hardness level of crisp pear and apple -pear, so crisp pear had better consumed in seasonable, extracted juice, sliced and so on. While the anti-mechanical damage ability of Apple-pear were more than crisp pear, therefore, apple -pear suits storing and transportation. Consequently, it is meaningful that established Multi-dimensional equation of motion between the pear fruit Mechanical characteristics Parameters and the quality target and carried through the significance examination.
