Abstract
The acid-catalyzed hydrolysis was applied in the extraction of soluble dietary fiber from dried apple pomace which were discharged by apple juice industry.Through the response surface methodology(RSM)designing and analyzing,four independent variables included the hydrochloric acid concentration,the ratio of solid to liquid in slurry,the extraction time and the extraction were determined.Each of the four variables had highly significant influence on the response value.The optimum conditions of soluble dietary fiber extraction were as follows:hydrochloric acid concentration 2.0%,liquid/material ratio 17mL/g,extraction time 65min and temperature 78.2℃.Under these conditions,soluble dietary fiber yield of 17.68% was obtained.
