Abstract
The process of low molecular weight dextran biosynthesis was preliminary studied by high performance liquid chromatography(HPLC).Large molecular weight dextran syntheses with Leuconostoc mesenteroides fermentation were controlled by dextranase which was derived from Penicillium cyclopium.Under the given condition,the range of molecular weight of dextran in fermentation broth was 70 KD- 40 KD.In addition,by comparison of the infrared spectra between standard dextran and the purified product,it was confirm that fermentation product and degradation product were exactly dextran.
