Abstract

In order to improve the quality of Luzhou-flavor liquor, all-sided technical quality control on production patterns and important factors influencing product quality is required. In this paper, technical control and management in the fields of liquor-making microbes, liquor-making raw materials, and liquor-making techniques etc. were introduced in details for reference.
