Abstract
This text choose red amaranthus as the unprocessed materials, adoption microwave extraction technique extracts red pigment from amaranthus to change the proovy way. Using spectrophotometric measured the maximum absorption wavelength and the result is 540nm, then studied the stability of red pigment. The results showed that the use of microwave extraction is higher efficiency and lower energy consumption than the traditional extraction process. Oxidants and reductant will reduce the stability the red pigment of amaranthus, but common food additives and several metal ions have little effect on it.
