Abstract

By making the yield ratio and the content of polysaccharide from Jujube as index,the effects of every main factors on extraction ratio by enzyme extraction process are discussed,and the optimum conditions of extraction effective components from jujube are determined With the Single diathesis test.According to this process,the yield ratio of polysaccharide is up to 4.7%,the content is 47.9%.
