Abstract

Content change for protein components,such as albumin,globulin,prolamin and glutenin,in germinating barley seeds was studied by using successive extraction and analysis of protein fractions.The albumin level of barley seed is low,when it's germinating,the level is step up fast from 3%~5% to 10%,and the peak is in the quart day after germination.The level is break down a little when after baking in green malt.Content change of globulin is not regularity,from 3% to 6% and to reach the peak 2 days after germination.The prolamin content decrease gradually after germination,but raise slightly in the glutenin content.
