Abstract
Pigment was extracted from the leaf of Prunus×cistenena 'Purpleleaf and Chevry' and its physicochemical characteristics were studied.The results showed that the maximum absorption wavelength of this red pigment was 535 nm,which can be dissolved in water and acid resolver,but not innon-polar organicsolven;the pigment was stable in different temperature and food additive and acid conditions,while it was unstable to light,oxidants and reductants,Metallic ions Na2+,Mg2+,Al3+,Ca2+ have no obvious effects on the stability and color,but Cu2+,Pb2+,Fe3+,Fe2+ which were able to turn the pigment into green and yellow had severe disadvantageous effects.
