Abstract

In this paper,the fermentation parameters,such as yeast number,alcohol content,reducing sugar,total acidity and volatile acid during grape wine fermentation were determined and the reasons of the variety was discussed,then its rule of change was obtained.the wine had good aspect and taste,its quality reached the national standard of wine.
