Comparison of the Properties of NAGase from the Different Organs of Prawn (Litopenaeus vannamei)

Abstract

The N-Acetyl-β-D-glucosaminidase(NAGase,EC 3.2.1.52) from Litopenaeus vannamei is closely related to periodic molting and growth of the prawn.We studied the variations of activity and basic properties of NAGase from the integument and hepatopancreas of the prawn.The result shows that the enzyme activities of the prawn from different organs are variational.The activity of enzyme from integument is 72 U per mg of protein,and the activity of enzyme from hepatopancreas is 60 U per mg of protein.The optimum pH of the enzyme from different organs is 5.5.The optimum temperature is 30℃ and 37℃,respectively.The kinetic parameters,active energy and the sensitivities to Cu2+,Zn2+ and Hg2+ of the enzyme from different organs are tested and compared in the paper.
