Abstract

Concentrations of the major nutritional components found in the fruiting bodies of four strains of Pleurotus citrinopileatus were determined. Fresh fruit bodies contained 87.5%~89.7% water, and the crude protein, crude fat, crude fiber and amino acid contents of dried fruit bodies were 42.3%~47.9%, 0.8%~1.9%, 10.7%~14.9% and 23.68%~25.42%, respectively. Fruiting bodies also contained high levels of seven essential amino acids, and the content of Arg and G1u were either similar to or higher than levels found in α-casein, ovalbumin and soy globulin.
