Abstract
The grain proteins of 20 wheat cultivars grown in Shaanxi at different periods were fractionated by SDS polyacrylamide gel electrophoresis to determine their high molecular weight glutenin subunit composition.Using the method described by Payne (1987),the quality scores of each of the subunits were summed to create a Glu 1 quality score for each cultivar.The results indicated that Shaanxi grown wheats have rather low Glu 1 quality scores.It was the most important reason that the frequency of subunits 5+10 was very low.The results were discussed in relation to future strategies for improving bread making quality of Shaanxi wheat cultivars.
