Abstract
Using alcalase to hydralysate chicken,based on the result of single factor test,the responses DH was analyzed using responses surface methodology to find out the option condition.The results indicated that the significance of the variables for improving DH was alcalase concentration﹥hydrolysis temperature﹥hydrolysis time﹥chicken protein concentration.The option condition of hydrolysis was 1g chicken in 5g water,5μL alcalase in 1g chicken,hydrolysis 5h in 47.3℃,pH8.5.When chicken was hydrolyzed with alcalase under option condition,DH was 25.53%.The alcalase hydrolysate had a noticeable scavenging activity toward ·OH and obvious AOV,and antioxidant activities improved with a higher degree of hydrolysis in certain range.
