Abstract
[Objective] The aim was to screen the optimum conditions for extracting water-soluble tea polysaccharide from Pu'er tea by hot water extraction method.[Method] By using hot water extraction method to extract water-soluble tea polysaccharide,according to the effects of extraction time,temperature,solid-liquid ratio,times on polysaccharide yield,the optimum factors were obtained through orthogonal test.[Result] The order of influencing factors for tea polysaccharide extraction from Pu'er tea are extraction time extraction times extraction temperature solid-liquid ratio;the optimum extraction conditions are solid-liquid ratio 1∶20 g/ml,temperature 90 ℃,time 1.5 h,extraction 2 times;under the above conditions,the optimum extraction rate is 54.5%.[Conclusion] The study will provide basis for tea polysaccharide extraction from Pu'er tea.
