Abstract
The extracting technology and stability of pigment from black plum were studied in this paper.The results showed that the optimum extracting condition was as follows: the extracting reagent was ethanol,the concentration was 30 %,the temperature was 80 ℃,the extracting time was 30 min,the proportion of material and extracting reagent was 1:100(g/mL) by single factor experiment.The maximum absorption wave length of this pigment was 510 nm,it was sensitive to pH,light and reducer.Heat,oxidant and some food additives had better effects on the stability,and citric acid and VC showed the evident color maintenance.The influences of Ca2+,Mg2+,K+,Zn2+ were not obvious.
