Abstract

Loach(Misgurnus anguillicaudatus) is one of the traditional export fish in China. It's popular in China because of its high protein contents in muscle and better flesh quality such as better flavor and tender flesh.Zygotes of diploid loach were treated with cold shock in order to induce triploidy. The triploid loach was compared with diploid loach on amino acids and fatty acids. With this experiment, the triploid loach had lower total amino acids content(TAA),total essential amino acids content(TEA) and total unsaturated fatty acids contents(UFA)(TAA: 62.87%,TEA: 26.23%,UFA: 61.5%) than those of diploid ones(TAA: 68.41%,TEA: 29.16%,UFA: 69.7%).While saturated fatty acid of triploid(SFA:34%) was higher than that of diploid ones(SFA:22.8%).The result showed that the taste relating amino acid contents in triploid was less than those of diploid, and the EPA and DHA contents in triploid were more than those of diploid. The analysis results showed that the nutritional value of artificial triploid loach was not higher than diploid loach during young stage.
